The skimmed milk is heated to an exact temperature before the certified skyr cultures are added. Modern processes like ultrafiltration allow proteins from the whey to be included too, when in times past they would have been removed.

 

Whey proteins are considered to be the best possible proteins for muscle building and repair, and they make up 20% of the protein content. They also help create a smoother, creamier texture, despite the absence of any fat.
